Micole Moore, Wine Maker
Micole Moore and his wife, Teri Kerns started Ramona Ranch Winery from the ground up. Literally! Micole is the primary winemaker and COO, but he also provides vineyard and wine-making consulting services. Micole is known for his attention to detail, and has helped guide winemaking decisions at several local wineries, experimenting and learning what does best in our climate. Teri also makes small batches of Ramona wine, and handles the barrel, and varietal selection as well as the marketing, sales and managing the tasting room.
A winemaker, also known as a vintner or oenologist, is responsible for the winemaking process from start to finish, including:
- Grape selection: Working with the vineyard teams to ensure grapes are growing properly and are ready to harvest. Micole decides when to pick the grapes based on the sugar levels, pH, and acidity numbers.
- De-stemming and pressing: Micole destems the grapes, leaving whole-berries for the fermentation process, while white and rosè grapes are pressed immediately following harvest.
- Fermentation: Micole monitors the fermentation process, using a native, or wild-ferment, rather than commercial yeast.
- Filtering: Micole gently filters the wine to remove solids.
- Aging: Micole decide how to age the wine, including the type of oak barrel, toasting level, and whether to use new or old barrels.
- Blending: Micole creates the unique blends, like our Super Tuscan and Tuscan Sun.
- Bottling: Micole decides when the wines are ready for bottling, which is done on-site to ensure the quality is maintained.
